This month, we’re diving into what it really takes to grow in this profession. We’ll be covering ACF certification pathways and getting an inside look at the Rocky Mountain Chefs of Colorado (RMCC) Apprenticeship Program.
The RMCC program is one of the most respected training models in the region—a 3-year, 6,000-hour paid apprenticeship that combines real kitchen experience with structured classroom education. Apprentices work full-time in professional kitchens while building skills, earning wages, and progressing toward nationally recognized credentials.
Graduates leave with:
- A Journeyman Certificate through the U.S. Department of Labor
- ACF Certified Culinarian (CC) credentials
- The opportunity to earn an Associate’s Degree in Culinary Arts
This is a serious pathway for developing the next generation of chefs—and a powerful tool for chefs and operators looking to build strong teams from within.
